Ingredients:-

Penne Pasta – 300 gms

Olive Oil – 1 tbsp

Onion – 1, chopped

Aubergine – 1, cut into small chunks

Tomatoes – 400 gms, chopped

Sugar – a Pinch

Basil Leaves – a handful

Goat’s Cheese – 200 gms, cubed

 

Method:-

  • Cook the Penne following pack instructions. Heat the oil in a pan, then gently fry the onion for about 5 minutes, until softened.
  • Add the Aubergine, cook for 10 minutes more, then tip in the tomatoes and sugar. Cook for 5 more minutes, then stir through the basil and goat’s cheese.  Toss with the drained pasta and serve.
