Ingredients:-

Spaghetti  – 150g (try Barilla)

Artichoke Hearts  – 100g can, sliced (try Natures Basket)

Lemon  – 1, juiced and zested

Parmesan – 25g, finely grated

Basil – a small bunch, shredded

Oilve Oil – 1 tbsp

Salt and Pepper – to season

Method:-

  • Cook the Spaghetti following pack instructions. Put the rest of the ingredients in a large bowl with olive oil, season well and mix.  Drain the Pasta, keep 2 tbsp of the cooking water, then toss everything together.
