Ingredients:-

Linguine  – 200g

Cherry Tomatoes  –  125g, halved

Green Olives  – a handful, pitted and halved (try Fragatta)

Capers  – 1 tbsp, rinsed (try Natures Basket)

Basil  –  25g, roughly chopped

Salt and Pepper  –  to season

Goat’s Cheese  –  50g, (try Natures Basket)

Method:-

  • Cook the pasta following the packet instructions, then drain. Meanwhile, tip the tomatoes, olives, capers and basil into a bowl and season well.
  • Tip in the pasta and toss to combine. Add the goat’s cheese in blobs and toss once.
