Ingredients:-

Fusilli Pasta  – 450g  

Ripe Cherry Tomatoes – 450g

Fresh Rocket  – 100g

Extra Virgin Olive Oil – 1 tbsp

Parmesan Cheese Shavings – 250g

Salt & Pepper

 

Method:-

  • Cook the pasta in boiling salted water, according to the instructions.
  • Meanwhile, have the tomatoes and trim, wash and dry the rocket.
  • Heat the oil in a saucepan, add the tomatoes and cook briefly for a minute. The tomatoes should just heat through and not disintegrate.
  • Add the rocket and stir carefully to mix and heat through. Season and serve immediately, topped with Parmesan cheese shavings and black pepper.
