Ingredients:-
Olive Oil – 2 tbsp
Large Aubergine – 1, cut into small cubes
Red Paprika – 4, roughly chopped
Garlic Cloves – 2, crushed
Red Chilli – 1, finely chopped
Tomatoes – 800 gms, chopped
Fusilli Pasta – 300 gms
Parmesan Cheese – grated, to serve (Optional)
Method:-
- Heat the oil in a large frying pan. Add the Aubergine and cook for 10 minutes until soft. Add the red paprika and fry until cooked through, adding the garlic and chilli at the final minute. Tip in the tomatoes, turn up the heat and cook for 10 minutes until thickened, stirring regularly.
- Meanwhile, cook the Fusilli. Drain well, then stir through the sauce. Serve with a scattering of Parmesan, if you like.
